does switching to Esim change my phone plan?
In the settings menu when I go to change to esim, it asked me if I would like to add this plan to my account. What plan are they talking about?
It is asking you if you want to enable the ESIM as a second phone line, hence another line to your existing plan. If you want to change to ESIM and disable your current SIM, you have to activate that thru TMobile so they can assign it to your existing phone line.
